As far as I know, to upgrade from Office 2016 for Mac to Office 2019 for Mac (Volume Licensed version), you need to push both the current Office 2019 packages and the 2019 version of the Volume License (VL) Serializer together. This will not uninstall Office 2016 for Mac that you have and this is simply an update. Hope it's helpful. Office 2019 / 2016 for Mac.
